Chocolate Dipped Orange Peels Vegetarian

Ingredients

3 Paramount Citrus oranges
1 cup water
1 cup sugar
8 ounces bittersweet chocolate

Directions

• Cut oranges into quarters and remove peel in large sections. Remove any excess pith.
• Cut peel into ¼ inch slices.
• Bring a pot of water to a boil and blanch the orange peels for 3 minutes, drain them and repeat this process two more times.
• Meanwhile combine water and sugar in a separate saucepan. Stir over low heat, until sugar dissolves in water.
• Add orange peels and simmer for 5-10 minutes over low heat, until the peels become translucent. Do not allow to boil.
• Transfer them to a large wire rack to drain and cool for 4-5 hours or overnight.
• Line a large plate or a tray with foil.
• Heat chocolate over a double boiler until it reaches a smooth consistency.
• Dip the peels in the chocolate and then place them on the foil to set.
• If you have left over chocolate, dip some almonds or coffee beans in the remainder.
