Chickpea, Chorizo and Orange Paella

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 1 Paramount Citrus orange
3 tablespoons butter
2 cloves garlic, crushed
½ cup chorizo, sliced fine
1 cup Arborio rice
1 sprig fresh thyme, chopped
¼ cup sun dried tomatoes
1 ½ cup chicken stock
½ cup canned chickpea, drained
1 tablespoon fresh basil, chopped
Salt and pepper to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a large pan, melt 1 tablespoon butter and sauté chorizo with garlic for 3-5 minutes.
• Add rice, fresh thyme, sun dried tomatoes, stock, fresh orange juice and orange zest.
• Season with salt and pepper to taste and cook covered over low heat until all liquid is absorbed.
• Remove from heat and let rice rest for 10 minutes, then add chickpeas and cook for 1-3 minutes to heat through the chickpeas.
• Sprinkle with chopped fresh basil and serve.
