Chicken With Creamy Lemon Sauce

Ingredients
zest from 1 Paramount Citrus lemon
juice from 2 Paramount Citrus lemons
4 chicken breast halves (about 2 lbs.)
salt and pepper to taste
4 tablespoons unsalted butter
1 cup heavy cream
½ teaspoon ground black pepper
½ teaspoon dried tarragon
1 cup mozzarella cheese
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Season chicken breasts with salt and pepper; grill on a lightly greased grilling pan over medium-high heat until almost cooked through.
• Preheat oven to 375°F.
• In a saucepan, melt butter and mix together fresh lemon zest, lemon juice, cream, black pepper and tarragon.
• Bring the sauce to a boil and cook for 5 minutes.
• Place the chicken breast in an ovenproof dish.
• Pour the creamy lemon sauce over the chicken.
• Sprinkle cheese over the sauce.
• Bake for about 30 minutes until golden brown and serve immediately.
