Caribbean Rice

Ingredients
Juice from 3 Paramount Citrus oranges
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemons
3 tablespoons unsalted butter
1 small onion, diced
2 cups rice
1 teaspoon salt
2 cups water or chicken or vegetable stock
2 tablespoon fresh mint, minced
½ cup pineapple, chopped
Directions
• Juice three oranges with a citrus reamer or juicer; set aside.
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In medium saucepan heat butter and sauté onions.
• Add rice and salt and cook for 1 minute.
• Add water or stock, fresh orange and lemon juices and lemon zest.
• Stir well, cover and simmer over medium-low heat until rice absorbs the liquid.
• Stir in fresh mint and pineapple and serve immediately.
