Calamari Salad with Citrus Dressing

Ingredients
1 lb. calamari rings
2 tablespoons olive oil
Salt and pepper to taste
1 lb. salad baby greens
1 small red onion, sliced fine
1 cup cherry tomatoes, halved
1 English cucumber, sliced fine
DRESSING
Zest from ½ Paramount Citrus lemon
Juice from 2 Paramount Citrus lemons
Juice from 2 Paramount Citrus oranges
1/3 cup olive oil
1 clove garlic, minced
¼ teaspoon ground black pepper, crushed
Salt to taste
Directions
• Zest half of a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• Season calamari rings with salt and pepper.
• In a large skillet heat olive oil, and cook calamari rings until golden browned.
• Meanwhile, in a medium bowl, whisk together fresh orange juice, lemon juice, lemon zest, olive oil, garlic, salt and ground black pepper.
• In a large salad bowl, mix together salad greens, onion, tomatoes, cucumber slices and calamari rings.
• Toss salad with dressing and serve.
