Blackened Shrimp And Blood Orange On Sugarcane Skewers

Ingredients
16oz can sugarcane in syrup, cut into thin reed-like skewers
1 lb. of 16-20 shrimp
5 blood oranges, cut into fourths
3 tbsp. Blackening seasoning
1 tsp. salt or salt to taste
Directions
Cut the sugarcane into thin strips.
Slide a knife blade through the shrimp and citrus slices to make a hole to push the sugarcane skewer through. This must be done gingerly, as the sugarcane isn’t that strong. This part is labor intensive but well worth the trouble. Gently toss the skewers in the blackening seasoning and salt and pepper. Grill on a grill, or use a cast iron grill pan and grill the shrimp and blood orange skewers. Serve immediately.
Note: Sugarcane can be found in many local Asian markets.
