Beef Stew

Ingredients

Zest from 1 Paramount Citrus orange
Juice from 3 Paramount Citrus oranges
2 carrots, diced
1 onion, chopped
1 sweet potato, diced
¼ cup flour
Salt and pepper to taste
2 lbs. lamb
½ cup diced tomatoes
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
½ teaspoon black pepper
1 teaspoon cumin
½ teaspoon fresh ginger, crushed
Olive oil
1 cup beef stock

Directions

• Preheat oven to 350°F.
• Zest an orange using a zester or a fine grater; set aside.
• Juice three oranges with a citrus reamer or juicer; set aside.
• In a large skillet sauté onion, carrot and potato with olive oil.
• Transfer the sauté to a plate.
• In a large bowl mix flour, salt and pepper to taste.
• Add the meat to the mixture.
• Mix well.
• Put some more olive oil into the skillet and sauté meat.
• Cook meat in batches until browned and set aside.
• Put meat, sauté and orange juice in a big ovenproof pan.
• Add the garlic, parsley, black pepper, cumin and ginger.
• Cook for 5-7 minutes.
• Add the stock, orange zest and tomatoes and cook until boiled.
• Cover the pan and transfer to the preheated oven.
• Cook for 1-1 ½ hours.
• Serve with your choice of fresh parsley or mint.
