Baked Onion with Lemon and Feta Cheese

Ingredients
Juice from 2 Paramount Citrus lemons
4 medium Vidalia onions, quartered
2 tablespoon butter, melted
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
½ cup feta cheese, crumbled
Flat-leaf parsley or mint leaves
Directions
• Preheat oven to 400°F.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a small bowl, whisk together butter, oregano, salt and pepper.
• Toss in the onion quarters to coat.
• Wrap the onions with foil and bake at 400F for 35-40 minutes.
• Meanwhile in a small bowl, whisk together olive oil, garlic, fresh lemon juice.
• Place baked onions on a big plate.
• Toss gently with lemon dressing.
• Top with feta cheese and garnish with fresh parsley or mint leaves.
