Avgolemono Soup

Ingredients
Zest of 1 lemon
Juice of 2 lemons
6 cups chicken broth
½ cup long grain rice
2 eggs
Salt and pepper to taste
Chopped fresh parsley to garnish
1 cooked chicken breast halved (optional)
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice two lemons with a citrus reamer or juicer; set aside.
• In a large pot, bring stock to a boil.
• Add lemon juice, lemon zest and rice. Cover and cook for about 15 minutes until rice is cooked.
• In a blender, beat eggs and gradually add lemon juice.
• Add 1 cup of chicken broth, continuing blending.
• Add this mixture back to soup.
• Season with salt and pepper to taste.
• Cook over low-medium heat stirring occasionally for 3-5 minutes until steaming.
• Ladle into bowls, sprinkle with parsley and serve.
To make the soup with chicken:
• To make this soup with chicken, add the chicken when rice is cooked.
