Asian Citrus Zucchini

Ingredients
12 lbs. zucchini, ½ inch coin slices
6 oz. olive oil
2 oz. sesame oil
Zest and juice of 2 lemons and 2 oranges
6 cloves garlic, minced
2 inches peeled, minced ginger
3 oz. soy sauce
Salt and white pepper to taste
Directions
Mix all in hotel pans and bake covered in foil until tender. Excellent served cold with mixed greens and slices of lemongrass lemon gravlax.
