Artichoke Hearts with Lemon Wedges

Ingredients
3 Paramount Citrus lemons, sliced
½ cup extra virgin olive oil
1 onion, chopped
1-2 cloves garlic, minced
1 potato, cut into medium cubes
1 carrot, cut into medium cubes
1 lb. artichoke hearts,
½ cup peas
2 tablespoons dill, chopped
1 cup hot water
Salt to taste
Directions
• Slice three oranges; set aside.
• In a large pan, heat olive oil and sauté onion and garlic.
• Add potato and carrot cubes to the pan, place artichoke hearts on top of the vegetables and finally place fresh lemon slices on top of artichokes, cooked cover for 6-8 minutes.
• Add peas, salt to taste and dill.
• Add hot water and cook covered for 35-40 minutes.
• Let the dish rest for 30 minutes.
• Can be served warm or chilled.
