Artichoke, Grapefruit and Spinach Salad

Ingredients
Juice from 1 Paramount Citrus grapefruit
1 Paramount Citrus grapefruit, *supreme segmented
1 can artichoke hearts, drained and quartered
½ lb. spinach, cleaned and torn into bite size pieces
1 red onion, sliced
2 cloves garlic, minced
¼ cup extra virgin olive oil
1 teaspoon mustard
Salt and black pepper to taste
2 tablespoons almonds, halved

Directions
• Juice a grapefruit with a citrus reamer or juicer; set aside.
• *Supreme segment a grapefruit. Cube segments and set aside
• In a large salad bowl combine artichoke, spinach, grapefruit segments and red onion.
• In a small bowl whisk together garlic, fresh grapefruit juice, olive oil, mustard, salt and black pepper.
• Toss salad with dressing, top with almonds and serve.
