Almond Citrus Biscotti

Ingredients
6 tbsp. butter
1 c. sugar
1 tsp. vanilla
1 tbsp. orange zest
1 tbsp. lemon zest
2 eggs
½ c. slivered almonds
2 c. flour
1 tsp. baking powder
¼ tsp. salt
Directions
In an electric mixer, cream together butter and sugar until thoroughly mixed. Add vanilla, citrus zest and eggs and continue stirring. Add the almonds. Sift together the dry ingredients in a separate bowl. Add dry mixture to the creamed mixture until a dough forms. Divide the dough into two pieces. Form them each into a log shape that is 12” in length and place on a lightly greased baking sheet. Bake at 350 degrees Fahrenheit for 30 minutes. Cool for 15 minutes. Slice each log on an angle with a serrated knife into 12 to 14 pieces. Place the slices back on the baking sheet and bake for 5 to 7 minutes. Makes a lovely accompaniment to Citrus Spiced Tea.
